But I would also be interested in how to do so, in case things go bad with my device.
Concerning the JTAG adapter needed: What kind of adapter should be used ?
I've got a STM32 compatible device lying around here [bought it from olimex], would that do ?

Openocd 0.7.0 + olimex ARM-USB-TINY-H jtag works.
