12V is the maximum, right? I'm running it from a 5.6V 2.7A power supply and it works perfectly. What is the minimum? Will the switching regulators work down to 5V?

That power supply looks good! That should give you some room to attach USB devices like gedass said, and pull some considerable current from the 3.3V and 5V lines.
