What do you use for attaching a 2nd UART to the Carambola2 module?

The end project is a Volumio like audio player which has also a DAB+/FM module on board...and this module can be controlled only by UART @57600 BAUD...

Yes you are right.
Rambutan (QCA9557) and Lima (QCA4531 & QCA9531), commercial and industrial versions.
Rambutan module has 2x serial ports and free SPI port.

Any estimates when Rambutan will be available?
Think the Luma has no I2S/SPDIF outputs...

Anyway...ordered some NXP I2C2UART chips as well as some LinkIt Smart 7688 modules for testing...thanks for the link

The LinkIt Smart 7688 might be also a good alternative for our hundreds/thousand of Carambola2 modules for future products...
