Well, there are two drivers for webcams. If your cam is on none of the supported cam lists you probably won't get it to run. Best way to test it is to plug the cam into your PC and see what a full size Linux distribution makes of it.
Anyway, I'd get an UVC supported webcam (otherwise you couldn't use mjpg_streamer anyway, you'd have to use motion). The Logitech C270 is pretty decent, it has a resolution of 1600x1200 and supports 1280x720 (720p HD) and works well with mjpg_streamer/Carambola at that resolution. It's cheap too ( 22€ on Amazon ).
But basically any UVC supported webcam should work with mjpg_streamer/Carambola.
